Air Fryer Breakfast Taquitos

Ingredients

For the salsa verde:

  • 1 lb tomatillos, (about 6) husked and rinsed
  • 1 serrano pepper, stem removed
  • 1/2 white onion, roughly chopped (large)
  • 1 clove garlic minced (optional)
  • 1/2 cup cilantro, packed
  • 1 tbsp lime juice
  • 1/4 tsp kosher salt

For the taquitos:

  • 12 oz chorizo sausage (or other type of sausage), casing removed
  • 8 eggs
  • 1-2 tbsps milk
  • salt and pepper, to taste
  • 5 cups baby spinach
  • 15 small tortillas
  • 1 1/2 cups shredded cheddar cheese
  • Avocado oil spray

For topping (optional):

  • Avocado, cubed
  • Cilantro
  • Sour cream or Greek yogurt mixed with lime juice
  • extra salsa verde

Instructions

  1. Preheat the oven to broil and move the oven rack to the highest position. Place the husked tomatillo, serrano and onion on a baking sheet. Broil for about 5 minutes, then remove, flip, and broil for an additional 5 minutes, until charred. Let cool slightly.
  2. In a food processor, add the tomatillos, serrano pepper, onion along with the remaining salsa verde ingredients. Pulse on high until the mixture is mostly smooth and no large chunks of tomatillo or onion remain. The sauce will thicken in the fridge. You can prepare this ahead of time.
  3. Heat a large skillet over medium heat. Once hot, add the sausage and crumble with the back of a wooden spoon or spatula. Cook until crispy and cooked through, about eight to ten minutes. Remove with a slotted spoon and set aside on a plate lined with paper towel. Discard most of the fat remaining.
  4. In a large bowl, whisk the eggs with a splash of milk and salt and pepper.
  5. In the same skillet, pour in the eggs and cook over medium-low heat, until cooked through, about four minutes. Remove and set aside with the sausage.
  6. To the same skillet, add the spinach and cook until just wilted, about two minutes. Remove and set aside.
  7. Preheat the air fryer to 400℉.
  8. Assemble the taquitos by placing one tortilla on a flat surface. Place some of the eggs first, followed by the spinach, salsa verde and sausage. Top with cheese and then roll them up tightly, sealing with a toothpick.
  9. Place the taquitos in the air fryer and spray the tops with avocado oil spray and bake for five to six minutes. Flip and bake for another five to six minutes, until lightly browned and crispy.
  10. Serve with cubed avocado, cilantro, sour cream or greek yogurt and extra salsa verde if desired.
