Healthier Homemade Turtles: Vegan & Easy

  1. Place the dates in just boiled water for about 10 minutes, even if soft. Then remove, pit the dates and add to a food processor (or blender) along with the cashew butter and a pinch of kosher salt. Process until a dough forms and the mixture comes together.
  2. Roll the dough into one large ball and wrap in plastic wrap. Then place that in the freezer for about 1 hour to harden. This just allows you to break it apart easier and makes it much less sticky.
  3. Prepare a baking tray with parchment paper. Once you remove the dough from the freezer, take about 1 1/2 tbsp of the dough and roll it into balls. Flatten them slightly with your hands. If you find it's getting sticky, wet your hands with water.
  4. Take your flattened date caramel balls and place three pecans on the under side of your dough (one is the head, the other two are the feet). You want the top side of the pecan to peek out from the dough as you'll cover the dough with chocolate. See the photo in the blog post for reference if needed.
  5. Once all the turtles are made, place the tray in the fridge while you melt the chocolate.
  6. Melt your chocolate either on the stovetop over low heat in a small saucepan, or in the microwave in bursts.
  7. Once the chocolate is melted, take out the tray of turtles. Dunk each one (caramel side) into the melted chocolate. Carefully remove with a fork or spoon (or your hands) and place on the baking tray, chocolate shell side up. Add some flaky salt (if using) and continue with the rest.
  8. Place the tray in the fridge for about 20 to 30 minutes to harden. Once they are all fully hardened, place them in a container and leave them in the fridge or freezer until you're ready to eat.
