Vegan Mug Cake: Chocolate Tahini

A healthy, single serve cake that s made in the microwave. This one minute vegan mug cake combines tahini and chocolate and is perfect when you want a sweet treat.

  1. In a microwave safe mug, add the almond milk, tahini, coconut sugar and vanilla extract. Whisk well to incorporate.
  2. Add in the flour, baking powder and salt and whisk well with a fork to ensure it's all incorporated. Be sure to get the bottom and sides so the batter is well mixed. Then fold in the chocolate.
  3. Microwave on high for 80 seconds. Remove, let cool for 2 to 3 minutes. Top with ice cream if desired. Enjoy!
