When you just need to have chocolate cake, but you want it asap. This ultra gooey chocolate s’mores mug cake is yours in less than five minutes! Which is a good and bad thing. Good because your chocolate cravings are fulfilled quick, but bad, because you’re going to want to make this all the time. This recipe is soooo good, I made it three times in one week. I told myself, I just wanted to be sure it was perfect to share, but really, I couldn’t get enough of it. The melty chocolate and marshmallows combined with some crushed graham crackers with the flour results in all the epic-ness that is a s’more.

WHY MUG CAKES ARE AWESOME

If you’re new to the whole mug cake idea, let me explain why they’re the perfect dessert!

  • Easy to make: combine all ingredients in your mug, give it a whisk and then place it in your microwave for about 60-90 seconds. Mine takes 80 seconds. See – easy, peasy!
  • Delicious: I love how moist, flavourful and soft this cake is.
  • Single serve: sometimes, you just want a bite of cake, not a whole one. Or maybe you live alone and don’t need to (or want to) bake a whole cake. Regardless, this is a perfect single serve dessert.
  • The possibilities are endless: depending on what you’re in the mood for, you can whip up your own customized healthy mug cake. Birthday cake flavour – add sprinkles, chocolate mug cake – add chocolate, banana mug cake – add banana! It’s the best kind of choose-your-own-adventure.

Here’s what you’ll need to make this s’more mug cake.

How to Make a S’mores Mug Cake

In a microwave safe mug, whisk together the wet ingredients.

Add in the dry ingredients and most of the chocolate chips, you’ll reserve a few more for topping. Whisk well.

Place a large marshmallow on top of the batter. Add a few more chocolate chips.

Place in the microwave for 70-80 seconds. Remove and let cool slightly before enjoying!

HOW TO TELL IF YOUR MUG CAKE IS READY

  • Insert a toothpick in the center: You’ll be able to tell if your vegan mug cake is ready the same way you would with a regular cake. You can insert a toothpick in the centre and if comes out clean, it’s done. If you don’t think it’s done, just pop it back in the microwave for 10 second intervals until it’s fluffy, moist and cooked through.
  • It may look under baked, thats OK! The mug cake will look slightly under baked, which is what you want. If you overcook it, it will get too dense.
  • Let it cool: The other trick is to let your mug cake cool for about two to three minutes after cooking. This will allow it to finish cooking more.

Substitutions

Flour: use a gluten-free all-purpose flour if needed. This is the flour I’ve used and recommend. 

Gluten-free graham crackers: use a gluten-free graham cracker and blend it into a fine flour. 

Milk: use any type of dairy-free milk, or regular milk in this recipe.

Sugar: use another type of sugar, brown sugar, regular sugar, or another granulated sweetener of your choice instead. 

MORE MUG CAKE TIPS

  • Start your cook time at 60 seconds and add on from there: For an 800W microwave, 90 seconds is the ideal time to set.
  • Use a microwave-safe mug: a standard wide mug that can go in the microwave is all you need.
  • No microwave: Use your oven instead. Simply, use an oven safe ramekin and bake at 350 degrees for 10 to 12 minutes on a baking sheet.
  • Whisk the ingredients well: use a fork to make sure that all of the ingredients are well incorporated and blended well.

  1. In a microwave safe mug, pour in the almond milk, avocado oil and sugar. Whisk well. 
  2. Add in the all purpose flour, graham cracker crumbs/flour, baking powder, salt and about ¾ of the chocolate chips. Whisk well with a fork until well combined.
  3. Place the marshmallow on top and remaining chocolate chips. Transfer to the microwave and cook for 70-80 seconds, until just cooked through. 
  4. Let it sit for a few minutes, before digging in. Enjoy!
