For as long as I can remember I have been enjoying chia pudding for breakfast. I love the simplicity involved in making them and how easy they are to store for the week. But, after having the same kind of chia pudding, you can get a little bored with the flavours and toppings. Which is why I wanted to whip up some vegan chia pudding multiple ways and with some fun twists. They are all so tasty and can be made in less than 15 minutes, win-win!

Since I moved into my new condo in Toronto, I've been living without much furniture. And now as I sit here, writing this blog post out, I am happily sitting on my new couch. I didn't realize how much I missed having a couch! But, I needed to really take my time with buying new furniture because I have a tendency to be impatient and then impulsive. I lack the patience to go shopping and look for stuff and after a while, they all start to look the same. Just me?! But, I didn't want to do that this time.
I have never lived by myself before, it has always been with roommates in University or with my ex. So, I had full permission to really take time and figure out what I wanted. Plus I also had a lot going on and didn't have time to go out and look at stuff. Anyways, now I have a couch and a pantry to store all my kitchen stuff. The rest of the furniture should be coming in the next couple weeks and I am SO HAPPY. Because without furniture, it hadn't really felt like home just yet.
For these vegan chia puddings I wanted to get creative with the flavours and so I came up with these variations. They are mango matcha, vanilla raspberry and chocolate, banana and almond butter. Depending on your mood and tastes, I think you'll find one that you really like.
I love how hands-off chia pudding is to make, simply mix the chia seeds with whichever milk you're using, add some flavours and let it gel. Usually, I leave mine in the fridge for about 15-20 minutes at a minimum and thats it. You can also leave your vegan chia pudding in the fridge overnight. And if you want to make enough for the next couple of days, they store really well in the fridge. I've left mine in the fridge for three days and it was still good on the third day.
For this mango matcha chia pudding, I wanted to combine some tropical vibes with the green tea goodness that is matcha. One thing I am obsessed with is matcha. I have a matcha latte every morning and if I don't have it, I feel off. Just as someone who has a coffee every morning, it's the same way.
I am really particular about my matcha because there are lots of terrible ones out there. It has to be smooth and not bitter like so many on the market. My go-to brand is My Matcha Life and you can read more about them on this post if you want. Coconut milk would also work really well in this vegan chia pudding. But feel free to use whatever type of milk you have on hand.

Although this combination of flavours isn't super creative by any means, I really like it. In season raspberries are perfect for this vegan chia pudding, but feel free to use another type of berry if you want, or frozen.
For this version, I wanted to create a higher protein breakfast option, so I added in some vanilla protein powder. My favourite plant-based protein powder at the moment is this one from Botanica Health.
If you are a fan of chocolate (like me!), you will loveeee this flavour. The addition of cocoa powder really makes this feel like a more decadent treat, but it is still not too sweet for breakfast. I felt like making this slightly more decadent and added a square of chocolate to it and some chocolate chips, but that is completely optional.
