Peach, Tomato & Burrata Salad

This summer ready peach tomato and burrata salad is packed with all the fresh produce, a simple balsamic & hot honey dressing and served with grilled bread on the side.

Ingredients

For the salad:

  • 2 large heirloom tomatoes, sliced and quartered
  • 3 peaches, quartered
  • 8 oz ball burrata (room temperature)
  • 2 tbsps chopped fresh basil, plus extra leaves for garnish
  • 3 tbsps salted and roasted pistachios, roughly chopped
  • flaky salt, for garnish
  • Aleppo pepper (optional, for garnish)
  • grilled or toasted sourdough bread, for serving

For the salad:

  1. Scatter the tomatoes and peaches onto a platter.
  2. Break open the ball of burrata and dollop it on the platter.
  3. Whisk together the dressing. Drizzle over top of everything.
  4. Top the salad with basil, pistachios, flaky salt and Aleppo pepper. Drizzle with more hot honey.
  5. Serve with bread on the side to scoop everything up. Enjoy!
