Watermelon Burrata Salad with Radishes

Looking for a different way to enjoy watermelon this summer? Try this fun and fresh watermelon burrata salad with a basil dressing, crisp radishes and crunchy and cooling cucumber. Toss in some sliced jalapeño for spice and you've got a sweet and spicy refreshing salad. This salad is super easy to prepare and great for serving to guests when you want to be a little fancy. Because although this salad looks fancy (hello burrata!), it's actually so simple to put together.

Watermelon is always such a fun summer fruit to enjoy. On a hot day, nothing beats biting into a perfectly juicy piece of watermelon. This salad aims to show off how juicy and delicious watermelon already is by pairing it with a few other complementary ingredients. Watermelon radish are perfect here because of their beautiful colour and milder taste, but feel free to use daikon, or regular radish if that's what you can find.

How to Make This Watermelon Burrata Salad

This simple watermelon and burrata salad is really easy to make. Note the tips I provide at the end of this post for some helpful guidance.

Place the watermelon cubes on a large serving platter. Top with radish, cucumber and jalapeño.

In a jar, or measuring cup, whisk together the oil, vinegar, chopped basil and salt and pepper.

Transfer the burrata to the platter and gently break apart. Drizzle the dressing all over the salad.

Garnish with fresh mint and extra basil. Serve and enjoy!

Tips

  • Room temperature burrata: similar to serving other types of cheese, room temperature is best. And if you want the burrata to ooze out and show off the creaminess, let the burrata ball sit out for at least 30 minutes before serving.
  • Slice thin: I recommend using a mandolin for slicing the radish thin. You can also use it for the cucumber, or just use a sharp knife to slice the cucumber thinly.
  • Fresh herbs: to make this watermelon burrata salad really pop, use fresh herbs like basil and mint. I don't recommend dried herbs for this salad.

Substitutions

  • Burrata: if you can't find burrata, feel free to use fresh mozzarella that has been roughly torn instead. If you somehow come across fresh stracciatella at a cheese shop, you could also use that. That is what's inside burrata after all!
  • Watermelon radish: I picked up some beautiful radish at my local farmers market, but if you can't find it, don't worry. Just use regular radishes, or daikon.
  • English cucumber: the easiest to find cucumber is what I went with here. But Persian cucumbers would be great here. They're smaller, so you will need a few.
  • Jalapeño: jalapeño is a solid choice here, but if you want a little more spice and a smaller pepper, try serrano instead.

Ingredients
  • 6 cups cubed watermelon
  • 1/2 small watermelon radish, sliced thin
  • 1/2 large cucumber, sliced thin
  • 1/2 jalapeño, thinly sliced (or serrano)
  • 1/4 cup extra virgin olive oil
  • 1 1/2 tbsps white wine vinegar
  • 3 tbsps finely chopped fresh basil, plus extra for garnish
  • salt and pepper, to taste
  • 8 oz ball burrata (room temperature) 
  • fresh mint, for garnish
Instructions

This salad tastes best when served fresh.
