Smashed Roasted Radishes with Za'atar

These roasted radishes are smashed and baked until crispy. Tossed in a za'atar and parmesan coating, they're perfect served with Greek yogurt on the side.

Ingredients
  • 3/4 lb (12 oz) radishes, sliced in half
  • 2 tbsp extra virgin olive oil, plus extra for drizzling
  • 2 tsps za'atar
  • 1/2 tsp kosher salt
  • 1/2 cup parmigiano reggiano (freshly grated, plus more for topping)
  • 1 tbsp finely chopped parsley
  • Greek yogurt, for dipping
Instructions
  1. Preheat the oven to 425ºF and place a baking sheet in the oven.
  2. Place the radishes in a bowl and toss with the oil, za'atar and salt.
  3. Remove the baking sheet and place the radishes cut side down. Transfer to the oven and bake for 20 minutes.
  4. Flip the radishes and bake for another 15 to 20 minutes, until tender.
  5. Use a fork to press down onto the radishes to smash them. Quite a bit of water will be released. Use paper towels to press down firmly and remove as much water as possible, it will be A LOT! Wipe down excess water on the baking sheet as well, or use a new baking sheet.
  6. Once all the radishes are done, sprinkle the parmesan over top and drizzle with a bit more olive oil and more za'atar if a lot of the seasoning came off. Transfer back to the oven and broil on high (500ºF) for five minutes, until browned and crispy.
  7. Sprinkle the radishes with parsley and extra parmesan. Serve with yogurt on the side for dipping. Enjoy!
