Whipped Feta with Roasted Tomatoes & Za'atar

Be prepared to be obsessed. This creamy whipped feta with roasted tomatoes is an absolute dream and once you try it, I'm sure you'll be obsessed as well. The blistered and slightly burst cherry tomatoes are served on top of creamy whipped feta with a sprinkling of za'atar for a Mediterranean inspired appetizer perfect for sharing with guests. It's a beautiful end of summer appetizer, but you can also make it year round.

The end of summer produce is my personal favourite. I love stocking up on all the delicious fruits and veggies that are at their peak flavour wise right now. As much as I love fall, I'm never going to be that girl pushing fall in late August or early September. I truly love admiring all of the veggies, especially tomatoes in September. As for this recipe, I'm pairing in season cherry tomatoes with whipped feta and za'atar for a delicious appetizer. This whipped feta with roasted tomatoes is low on ingredients, but packs a flavourful punch.

Ingredients

Here's everything you'll need to make this whipped feta with cherry tomatoes.

  • extra virgin olive oil
  • cherry tomatoes
  • kosher salt and pepper
  • feta cheese
  • za'atar
  • fresh oregano leaves
  • pita chips

A Note on Za'atar Spice

So what is Za’atar exactly?

It’s the name of a spice mixture that is used as a condiment. It contains herbs such as oregano, thyme and/or marjoram, sumac, toasted sesame seeds and salt. It can also contain a few other ingredients depending on the region in the Middle East.

You can find the blend at Middle Eastern grocery stores, online at Amazon, or you can make your own.

How to Make Whipped Feta with Roasted Tomatoes

Ever since making this viral whipped feta dip with sizzled scallions and hot honey, I've been wanting to make different variations. So I tried my hand at whipped brie with strawberries and basil, so delicious. And now, I have this whipped feta with roasted tomatoes and za'atar.

Making this whipped feta dip is so easy. All you need to remember is to take out your block of feta to get it to room temperature before whipping.

If you want to make your own homemade za'atar pita chips, check out this recipe from The Mediterranean Dish. This is how I made mine at home.

Heat a large cast iron skillet over medium heat. Drizzle in the olive oil. Once hot, add the tomatoes. Cook until softened and about to burst, about ten to twelve minutes. Season with salt and pepper and set aside.

Add the feta to a food processor and process on high until completely whipped, smooth and creamy, about two to three minutes.

Spoon the feta into a bowl, top with the tomatoes, za'atar and fresh oregano.

Serve with pita chips and enjoy!

Tips for Making a Creamy Whipped Feta Dip

  • Room temperature cheese: this will whip easier and result in a creamier dip when using room temperature feta. I usually let it sit out for about a half hour to an hour before making.
  • Process on high: for a super smooth whipped feta dip, be sure to process on high in the food processor for a few minutes. This will result in smooth and creamy whipped feta.
  • Use a food processor: this is the easiest appliance to use for this dip. A blender will also work, but it's a pain to clean, so I recommend a food processor, this is the one I use.
  • Roasting in the oven: you can of course roast the tomatoes in the oven if you prefer. Simply toss the tomatoes with olive oil, salt and pepper and place in a baking dish. Roast at 400ºF for about 25 to 30 minutes.
  • Flaky salt: adding a touch of flaky salt at the end makes this dish pop a little more.
  • Lemon zest: if you want to brighten this whipped feta with roasted tomatoes a bit more, add some lemon zest on top.

Storage

  • Store leftover whipped feta with roasted tomatoes in a sealed container in the fridge for up to three days.
  • This dip is best enjoyed at room temperature.
  • Store dip and tomatoes separately if possible and then assemble when ready to eat.

Substitutions

  • No feta: try this with whipped ricotta or goat cheese instead.
  • Fresh oregano: use another herb instead such as chopped parsley. I prefer fresh oregano for a little more punch.
