Air Fryer Baked Brie Bites

These air fryer brie bites are topped with fig jam and wrapped in phyllo and baked until crispy perfection.

Ingredients

  • 1/4 cup walnuts (raw)
  • 1-2 tsps extra virgin olive oil
  • 2 sprigs rosemary
  • 6 phyllo sheets (thawed)
  • 1/2 cup butter (melted)
  • 9 oz brie (rind left on), cut into squares
  • 1/3 cup fig jam
  • honey, for drizzling
  • flaky salt (optional)

Instructions

  1. Preheat the oven to 325℉ and place the walnuts on a baking sheet. Bake until toasted and fragrant, about six to seven minutes. Chop and set aside.
  2. Heat a small skillet over medium-low heat and add the oil. Once warm, add the rosemary and stir and cook until the rosemary is slightly crispy, about four to five minutes. Remove and let cool before chopping.
  3. Place one sheet of phyllo on a clean work surface and brush half with melted butter. Fold in half and then move the phyllo so the long side is facing you.
  4. Place one square of brie on the phyllo just below the midway point. Top with a dollop of fig jam.
  5. Fold the phyllo over the brie and then fold over both sides. Brush with butter (work quickly, so it doesn't dry out). Wrap the phyllo up into a little package (don't fold it too tight). Brush the top with butter. (see photos and video for reference).
  6. Keep brie bites under a damp clean kitchen towel while you repeat with the remaining bites.
  7. Place the brie bites seam side down in the air fryer and bake at 370℉ for four minutes, until golden brown on top.
  8. Transfer the brie bites to a plate and top with rosemary, chopped walnuts, honey and flaky salt. Enjoy warm!
