Watermelon Burrata Salad

This refreshing watermelon burrata salad pairs crisp and cooling cucumbers and radish with jalapeño and a light basil dressing. Perfect for a hot summer day!

Ingredients

  • 6 cups cubed watermelon
  • 1/2 small watermelon radish, sliced thin
  • 1/2 large cucumber, sliced thin
  • 1/2 jalapeño, thinly sliced (or serrano)
  • 1/4 cup extra virgin olive oil
  • 1 1/2 tbsps white wine vinegar
  • 3 tbsps finely chopped fresh basil, plus extra for garnish
  • salt and pepper, to taste
  • 8 oz ball burrata (room temperature) 
  • fresh mint, for garnish

Instructions

  1. Place the watermelon cubes on a large serving platter. Top with radish, cucumber and jalapeño.
  2. In a jar, or measuring cup, whisk together the oil, vinegar, chopped basil and salt and pepper.
  3. Transfer the burrata to the platter and gently break apart. Drizzle the dressing all over the salad.
  4. Garnish with fresh mint and extra basil. Serve and enjoy!
